We love most beans around here.Salt pork i grew-up with from the south this is the best of both for me. I can run to the basement for a jar anytime for a quick supper.

Ingredients
- 2 pounds navy beans wash & sort
- 3 quarts cold water
- 3 cups tomatoe juice
- 1-6 ounce can tomatoe paste
- 1/2 cup onion chopped
- 1/2 cup green bell pepper chopped
- 1 tablespoon worcestershire sauce
- 1 tablespoon sugar
- - few drops of hot sauce
- 1/4 pound salt pork,cut in small pieces,remove rind

Step 1Rinse beans in a large kettle place beans & 3 qts. water bring to a boil :simmer 2 mins.remove from heat cover let stand 1 hr.

Step 2In a large pot combine tomatoe juice,paste,onion,green pepper,worcestershire sauce,sugar& hot sauce.Cover bring to a boil reduce heat simmer 10 mins.

Step 3Drain beans add salt pork and the sauce mix well pack hot mixture into hot jars 3/4 inch head space process 10 lbs. pressure. Pint for 80 mins. quarts 100 mins.
