This recipe evolved with my trying to duplicate the taste of Campbell's Bean with Bacon soup, so I would not have to use canned soups all the time. It comes pretty close. I still find myself using the cans, but this has become a family favorite.

How to Make Bean With Bacon Soup

Step-by-Step

  1. Soak beans 6 hours or overnight. Drain off soaking liquid.
  2. Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.

  4. Serve with corn bread, or over spoon bread.
