bean with bacon soup
This recipe evolved with my trying to duplicate the taste of Campbell's Bean with Bacon soup, so I would not have to use canned soups all the time. It comes pretty close. I still find myself using the cans, but this has become a family favorite.

Ingredients
- 2 cups dry navy soup beans
- 2 quarts water
- 12 ounces bacon, cooked and crumbled
- - (or use equivalent amount of vegetarian bacon strips)
- 1 - carrot, finely chopped
- 1 - celery stalk, finely chopped
- 1/2 cup onion, finely chopped
- 1/4 cup tomato sauce or ketchup
- - salt and pepper to taste
How To Make bean with bacon soup

Step 1Soak beans 6 hours or overnight. Drain off soaking liquid.

Step 2Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.

Step 3When beans are done, stir in tomato sauce, salt and pepper to taste. Heat through about 10 minutes (30 minutes on high for crock pot).

Step 4Serve with corn bread, or over spoon bread.
