bean with bacon soup

This recipe evolved with my trying to duplicate the taste of Campbell's Bean with Bacon soup, so I would not have to use canned soups all the time. It comes pretty close. I still find myself using the cans, but this has become a family favorite.

Ingredients

  • 2 cups dry navy soup beans
  • 2 quarts water
  • 12 ounces bacon, cooked and crumbled
  • - (or use equivalent amount of vegetarian bacon strips)
  • 1 - carrot, finely chopped
  • 1 - celery stalk, finely chopped
  • 1/2 cup onion, finely chopped
  • 1/4 cup tomato sauce or ketchup
  • - salt and pepper to taste

How To Make bean with bacon soup

  • Step 1
    Soak beans 6 hours or overnight. Drain off soaking liquid.
  • Step 2
    Place soaked beans, 2 quarts water, bacon, carrot, and onion in a large soup pot or crock pot. Cook 1 1/2 hours until beans are soft (at least 6 hours on low in crock pot). Add water if necessary to maintain soup-like consistency.
  • Step 3
    When beans are done, stir in tomato sauce, salt and pepper to taste. Heat through about 10 minutes (30 minutes on high for crock pot).
  • Step 4
    Serve with corn bread, or over spoon bread.
