A delicious main-dish bean soup - I like serving this with corn bread!

Ingredients

  • 1
    onion, small white
  • 1
    pepper
  • 3 can(s)
    beans (such as pinto, black, garbanzo, etc.)
  • 1 can(s)
    fire roasted tomatoes
  • 2 Tbsp
    italian seasoning
  • 1 Tbsp
    cumin
  • ·
    green onions
  • ·
    cilantro
  • ·
    avocado

How to Make Bean Soup

Step-by-Step

  1. Saute onion in a bit of olive oil over medium high heat until onion is translucent. Add in beans and tomatoes, mix to combine. Add herbs and spices.
  2. Simmer 30 minutes or so so flavors can meld. Serve with sliced green onions, cilantro and avocado.
