This is my favorite soup! The combination of bacon, zucchini, spinach and beans is great! Oh so good for you too!

Ingredients

  • 6 ounces bacon ( slices)
  • 1 - onion diced
  • 2 - celery stalks, diced
  • 2 - zucchini, diced
  • 2 - carrots, small - diced
  • 1 - garlic clove, finely diced
  • 2 cans 15 oz. great northern beans, rinsed and drained
  • 1 can 14 oz. tomatoes chopped, undrained
  • 3 cups chicken broth, reduced sodium
  • 6 cups fresh spinach, chopped
  • 1/4 cup parmesan cheese, grated
  • - black pepper and salt

How To Make bacon and beans and everything nice soup

  • Step 1
    Put bacon in a large sauce pan over medium heat. Cook 5 minutes or until almost crisp. Remove and break into small pieces. Add it back to the pan and move on to step two. Alternately, you could cut it up before cooking.
  • Step 2
    Add onions, celery and carrots, cook 5 minutes.
  • Step 3
    Add zucchini and garlic, cook for 3 minutes
  • Step 4
    Add beans, tomatoes and broth. Add salt and pepper to taste. Bring to a boil and reduce heat. Simmer for 10 minutes.
  • Step 5
    Stir in spinach. Spoon into soup bowls and top with grated cheese. Enjoy!
