Ingredients

  • 1 pound red onions, sliced
  • - apple cider vinegar
  • - water
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons kosher or pickling salt
  • 1 teaspoon whole mustard seed
  • 1 teaspoon crushed red pepper (leave out if you want)
  • 1 teaspoon whole coriander seeds
  • 1 teaspoon whole black peppercorns
  • 2 cloves garlic lightly crushed

How To Make refrigerator pickled onions

  • Step 1
    Pack sliced onion into a one quart jar. Usually takes about 1 large red onion.
  • Step 2
    Fill the jar with water to cover the onions then pour the water into a measuring cup.
  • Step 3
    Note the amount then pour off 1/2 the water.
  • Step 4
    Add vinegar to the water to bring it back to the original measure.
  • Step 5
    Place the liquid in a saucepan and add the spices and garlic.
  • Step 6
    Bring to a boil and simmer for 2 minutes.
  • Step 7
    Pour over the onions in the jar. If you are a little short of covering the onions you can add a little water.
  • Step 8
    Cover tightly and store in the refrigerator. Keeps up to a month, if they don't disappear first!
