kicked up hush puppies

I usually only make these when having Seafood, but my son loves them and asks for them just as a snack...so, he got his way today...he dips them in Ranch dressing...they have quite the kick to them, as my jalapeno's are quite hot...you can make them without too - delicious either way! Enjoy!

method Deep Fry
yield 20 - 24 - depending how big you make them...I use an icecream scoop size.

Ingredients

  • 1 1/2 cups yellow corn meal
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/2 - 1 teaspoons salt
  • 1/4 teaspoon onion powder
  • 1 small onion, minced
  • 1 tablespoon minced jalapeno - mine are hot, can use more if mild - optional
  • 1 - egg, slightly beaten
  • 1 cup milk

How To Make kicked up hush puppies

  • Step 1
    In a bowl, combine cornmeal, flour, baking powder and salt & onion powder.
  • Step 2
    Beat egg slightly and add it to the bowl, along with the milk, onion and peppers. Stir until blended. Leave batter set for about 5 minutes, before frying in hot oil.
  • Step 3
    Drop into hot grease by Tablespoonfuls. Fry until golden brown. ( flipping occasionally ).
  • Step 4
    Drain on paper towels and enjoy with a dip or garnished with Parmesan cheese. I normally serve these with fish, but the son wanted some as a snack...Lol!
