haynes' cookies

My neighbor Betty Haynes gave me this recipe over 50 years ago and I have never changed it..as the 'best' of the oatmeal cookie recipes you don't need to. It has a couple of options anyway..dates are best.

Ingredients

  • 1 cup dates or raisins
  • 1 cup vegetable shortening
  • 1 1/3 cups sugar
  • 3 - eggs
  • 2 cups flour- can be whole wheat
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 1/4 teaspoons cinnamon
  • 3/4 teaspoon allspice
  • 2 cups quick oats
  • 6 tablespoons date or raisin liquid
  • 3/4 cup optional nuts, chopped

How To Make haynes' cookies

  • Step 1
    In a small saucepan boil dates and or raisins covered for 5 minutes. Turn off, let set to cool, Drain and reserve juice. If using Raisins, I use golden. Dates are best. Need 6 T. of juice.
  • Step 2
    cream shortening and sugar until fluffy. Add eggs and beat.
  • Step 3
    Sift dry ingredients and mix with oats.
  • Step 4
    Add to shortening, sugar mix and alternate with 6 T. of the liquid.
  • Step 5
    Add fruit. Drop by Tablespoon full onto cookie sprayed cookie sheet.
  • Step 6
    Bake 400o for 10 to 12 minutes. Do NOT bake too long as it will dry them out. ( they are quick oats and will be moist).
  • Step 7
    Option: with Golden raisins I sometimes use Orange juice for the juice and reduce the sugar by 1/4 c. Can add 3/4 c.of your favorite nuts.
