banana snack cake
This was given to me by a home care nurse. Everyone I have served it to says it is better than banana bread! I make this about once a week it is so good anytime not just snack time.

Ingredients
- 1 2/3 cups all purpose flour
- 1 teaspoon baking soda
- 1 cup light brown sugar, packed
- 1/2 cup water
- 1/3 cup smashed very ripe banana, usually one
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- - powder sugar for dusting
- 3/4 cup chocolate chips, optional
How To Make banana snack cake

Step 1In a large bowl, combine flour and baking soda.

Step 2In a small bowl, whisk together brown sugar, water, banana,oil, and vanilla.

Step 3Stir liquid ingredients into dry ingredients just until most, do not over mix. Fold in chocolate chips if using.

Step 4Pour into greased 8 inch square pan. Bake at 350 for 30 to 40 minutes or until toothpick comes out clean. This will be very brown. Cool on wire rack. Dust with powder sugar. Cut into 9 squares.
