This was given to me by a home care nurse. Everyone I have served it to says it is better than banana bread! I make this about once a week it is so good anytime not just snack time.

  • 1 2/3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 c
    light brown sugar, packed
  • 1/2 c
  • 1/3 c
    smashed banana
  • 1/3 c
    vegetable oil
  • 1 tsp
    vanilla extract
  • ·
    powder sugar for dusting
  • 3/4 c
    chocolate chips, optional

How to Make Banana Snack Cake


  1. In a large bowl, combine flour and baking soda.
  2. In a small bowl, whisk together brown sugar, water, banana,oil, and vanilla.
  3. Stir liquid ingredients into dry ingredients just until most, do not over mix. Fold in chocolate chips if using.
  4. Pour into greased 8 inch square pan. Bake at 350 for 30 to 40 minutes or until toothpick comes out clean. This will be very brown. Cool on wire rack. Dust with powder sugar. Cut into 9 squares.
