·8 quarts unpopped popcorn (1/4 cup)
·2 cups brown sugar
·1 teaspoon vanilla
·1 cup oleo
·1/2 teaspoon baking soda
·1 teaspoon salt
·1/2 cup corn syrup
How to Make Madeleine's Caramel Corn, Megan's favorite!
- Preheat oven to 250 degrees. Butter a casserole dish well, then put in popped corn. In a saucepan, over low heat, combine all ingredients but corn and soda. When blended take off heat. Add soda and stir until mixture doubles in volume. Spread evenly over corn. Bake for one hour, stirring every 15 minutes so the caramel covers all of the corn evenly. If desired, add peanuts (halved and unsalted) before you top the corn with caramel.
