white chocolate chex mix
This recipe is a mash-up of all the things we love in a sweet and salty snack. The only trick is to use the right amount of crunchies and yummies that won’t overwhelm the amount of white chocolate coating. For example, if you want more pretzels, use less Chex cereal. If you have any other favorite ingredients, please share them in the comments. Did I mention it lasts for weeks in airtight storage, but it probably won’t? =^..^=

Ingredients
- 12 cups Chex cereal, any kind or combo
- 4 cups pretzel shapes, not sticks
- 4 cups salted peanuts
- 10 ounces M & M's
- 11 ounces Kraft caramel bits or heath bits
- 48 ounces white (vanilla) almond bark
- 11 ounces white chocolate chips
- OPTIONS TO CONSIDER REPLACING SOME OF THE ABOVE INGREDIENTS
- some Crispix or Cheerios (in place of some chex)
- some pecans or walnuts (to replace some/all peanuts)
- some peanut butter or butterscotch chips (instead of caramel bits)
- some Reese’s pieces or candy corn (to replace some M & M’s)
- some coconut or candied cherry pieces (for pretty; add after spreading to cool)
How To Make white chocolate chex mix

Step 1In a large container (like a foil turkey roasting pan), add Chex cereal, pretzels, peanuts, M & M’s, and caramel bits. Mix together well.

Step 2In a large microwave-safe container, like an 8 cup glass measuring cup, break the chocolate bark into pieces. Microwave for 90 seconds, stir, then melt in 20 second increments until bark is melted and smooth.

Step 3Add the white chocolate chips to the melted bark and stir until melted.

Step 4Pour the melted white chocolate mixture over the Chex mixture and stir together carefully, lifting everything from the bottom with a spatula, until all is coated.

Step 5Mist cooking spray or line parchment on cookie sheets or foil pans OR spread waxed paper or parchment over the counter or table, and then spread the Chex mixture out to cool.

Step 6Once the Chex mixture is cool and dry, break it into pieces and store it in airtight containers.
