Butter-Nut Squash baby food

The colour of a vegetable or fruit is often a good indication of its nutritive value - and the butternut squash is no exception!
Its deep orange hue tells you it's packed with beta-carotene, which your baby's body converts to vitamin A (a lot of beta-carotene in baby's diet can contribute to the harmless - but startling - 'orange nose' phenomenon!

organic butternut squash, about 3 cups


1Preheat oven to 375 degrees. Cut squash into quarters; remove seeds and place cut side down in a baking pan. Pour ¼ cup water in bottom of pan. Bake squash until fork tender, about 45 minutes. Remove from oven and scoop out flesh.
2Puree the squash after cooking, until you’ve reached the desired consistency. You may want to add 1 to 2 tablespoons water, breast milk or formula to thin.
