I was feeling like spinach pie for lunch one day, so I whipped this up instead. It tasted awesome...just like my spinach pie, and it only took about 15 minutes to make.

  • 1 1/2 tsp
    onion, finely chopped
  • 1 c
    frozen spinach
  • 1 Tbsp
    garlic infused oil
  • 1 pinch
    red pepper flakes
  • ·
    salt and pepper, to taste
  • ·
    juice from 1/2 lemon
  • 1/4 c
    mozerella or monterey jack cheese
  • 2 oz
    feta cheese, crumbled
  • 1
    whole wheat pita

How to Make Spinach Melt Pitas


  1. Use the oil to saute the chopped onion for a minute or two. Add the spinach and cook until it is heated through. Add a small pinch of red pepper flakes, a squeeze of lemon juice, and salt and pepper. Taste and adjust the flavors to your liking.
  2. Add the cheese to the pan with the spinach. Taste again and add more cheese if you need to.
  3. Cut the pita in half and carefully open each pocket. Put half of the spinach mixture in each half. Put the pita halves in a sandwich press and heat until toasty (2-3 minutes).
  4. Serve on own or with some heated marinara sauce.
