spinach melt pitas

I was feeling like spinach pie for lunch one day, so I whipped this up instead. It tasted awesome...just like my spinach pie, and it only took about 15 minutes to make.

Ingredients

  • 1 1/2 teaspoons onion, finely chopped
  • 1 cup frozen spinach
  • 1 tablespoon garlic infused oil
  • 1 pinch red pepper flakes
  • - salt and pepper, to taste
  • - juice from 1/2 lemon
  • 1/4 cup mozerella or monterey jack cheese
  • 2 ounces feta cheese, crumbled
  • 1 - whole wheat pita

How To Make spinach melt pitas

  • Step 1
    Use the oil to saute the chopped onion for a minute or two. Add the spinach and cook until it is heated through. Add a small pinch of red pepper flakes, a squeeze of lemon juice, and salt and pepper. Taste and adjust the flavors to your liking.
  • Step 2
    Add the cheese to the pan with the spinach. Taste again and add more cheese if you need to.
  • Step 3
    Cut the pita in half and carefully open each pocket. Put half of the spinach mixture in each half. Put the pita halves in a sandwich press and heat until toasty (2-3 minutes).
  • Step 4
    Serve on own or with some heated marinara sauce.
