I was feeling like spinach pie for lunch one day, so I whipped this up instead. It tasted awesome...just like my spinach pie, and it only took about 15 minutes to make.

Stove Top


1 1/2 tsp
onion, finely chopped
1 c
frozen spinach
1 Tbsp
garlic infused oil
1 pinch
red pepper flakes
salt and pepper, to taste
juice from 1/2 lemon
1/4 c
mozerella or monterey jack cheese
2 oz
feta cheese, crumbled
whole wheat pita

How to Make Spinach Melt Pitas


  • 1Use the oil to saute the chopped onion for a minute or two. Add the spinach and cook until it is heated through. Add a small pinch of red pepper flakes, a squeeze of lemon juice, and salt and pepper. Taste and adjust the flavors to your liking.
  • 2Add the cheese to the pan with the spinach. Taste again and add more cheese if you need to.
  • 3Cut the pita in half and carefully open each pocket. Put half of the spinach mixture in each half. Put the pita halves in a sandwich press and heat until toasty (2-3 minutes).
  • 4Serve on own or with some heated marinara sauce.
