spinach melt pitas
I was feeling like spinach pie for lunch one day, so I whipped this up instead. It tasted awesome...just like my spinach pie, and it only took about 15 minutes to make.

Ingredients
- 1 1/2 teaspoons onion, finely chopped
- 1 cup frozen spinach
- 1 tablespoon garlic infused oil
- 1 pinch red pepper flakes
- - salt and pepper, to taste
- - juice from 1/2 lemon
- 1/4 cup mozerella or monterey jack cheese
- 2 ounces feta cheese, crumbled
- 1 - whole wheat pita
How To Make spinach melt pitas

Step 1Use the oil to saute the chopped onion for a minute or two. Add the spinach and cook until it is heated through. Add a small pinch of red pepper flakes, a squeeze of lemon juice, and salt and pepper. Taste and adjust the flavors to your liking.

Step 2Add the cheese to the pan with the spinach. Taste again and add more cheese if you need to.

Step 3Cut the pita in half and carefully open each pocket. Put half of the spinach mixture in each half. Put the pita halves in a sandwich press and heat until toasty (2-3 minutes).

Step 4Serve on own or with some heated marinara sauce.
