This is such an easy recipe and makes a great appetizer for brunch or any occasion. It has just the right bite. My family and friends always enjoy this recipe. You can add more or less of the sauerkraut and corned beef as you like.

Ingredients

  • 2 cups sauerkraut, rinsed and drained
  • 10 ounces canned corned beef
  • 12 ounces shredded cheese
  • 1/4 cup salad dressing or mayonnaise
  • 1/2 cup thousand island dressing
  • 1 tablespoon lemon juice
  • 1 medium tomato, thinly sliced
  • 2 teaspoons dried basil
  • 2 slices rye bread, crumbled and toasted, plus more whole for serving

How To Make reuben casserole for the microwave

  • Step 1
    Drain and rinse the sauerkraut and spread over the bottom of a buttered 9x13-inch glass dish.
  • Step 2
    Crumble the corned beef evenly over the sauerkraut. Sprinkle the cheese over top.
  • Step 3
    Combine the salad dressing or mayonnaise, thousand island, and lemon juice and spread evenly over the cheese.
  • Step 4
    Top with the tomato slices and sprinkle with basil. Microwave for 3 minutes or until the cheese has melted. Remove from the microwave and sprinkle with the toasted bread crumbs. Let set for 2 to 3 minutes and serve on or with rye bread.
