Another one of my mom's recipes from my childhood. This was more of a novelty in the '60s & '70s, and today there are many variations. My mom believed it keeping things simple, but I encourage you to add your family's own unique, favorite twist. Kids and grands of all ages just love these, especially for a game party, weekend sleepovers or movie-watching snacks for the whole family. I've added pepperoni over the years, and tried several other traditional toppings such as black olives and peppers. As much as I love "supreme" pizzas, though - I always come back to this basic version - enjoy!

Ingredients For peggy's pizza burgers

  • 1 pkg
    thomas english muffins
  • 1 jar
    prego (or your favorite) pizza sauce
  • 1 pkg
    shredded mozzarella cheese (2-3 cups)
  • 1 stick
    fresh pepperoni
  • butter or margarine
  • parmesan cheese

How To Make peggy's pizza burgers

    Preheat the oven to 375 degrees.Split the English muffins. If you would like more of a golden brown crisp, then toast the muffins in the toaster first. In either event, lightly butter the muffins.

    Arrange the muffins cut side up on a foil-lined or sprayed baking sheet. Spoon a generous tablespoon of your favorite pizza sauce over each muffin half. I like Prego, but there are several that are good, and you can experiment with different flavors that your kids like. My daughters liked it pretty plain when they were little. Thicker is better as the oven will thin out the sauce a bit.

    Top with the Mozzarella cheese and if desired, thinly sliced pepperoni, cut into quarters. Sprinkle with Parmesan cheese You can a bit more mozzarella to help anchor the other toppings should you decide to experiment.

    Bake for 10-12 minutes in the pre-heated oven, or until the cheese is melted and browned on the edges. Place on paper towels to drain any excess grease from butter and pepperoni - trust me, it will go a long way in saving your furniture from grease stains. Serve and enjoy!
