This is what I look forward to every fall/Halloween! It's my once a year treat/guilty pleasure! This is the ONLY way I'll eat my roasted pumpkin seeds. But, you either love them or you hate them. I had a friend who couldn't make up her mind if she liked them or not. In the process, she almost ate them all! I think she liked them!!!

Ingredients For "no vampires" garlic roasted pumpkin seeds

  • pumpkin seeds, out of 3 - 4 pumpkins (the larger the better)
  • 2 stick
butter, cold, cut into tbsp chunks
  • garlic salt
  • garlic powder

How To Make "no vampires" garlic roasted pumpkin seeds

  • 1
Preheat oven to 350 degrees F.
  • 2
Gut out pumpkins putting the seeds in a large bowl. It's ok if you get that gookie orange goop with it - it adds flavor.
  • 3
    Rinse seeds (& goop).
  • 4
Roll out seeds onto baking sheet & spread out evenly.
  • 5
Cut butter into tbsp chunks & place in random areas all over seeds.
  • 6
Load it totally with garlic salt &/or garlic powder (I do both). NOTE: You'll know if you've done this right when it's cooking. If you did it right...your eyes should be burning/watering from all the garlic.

Bake for 30 minutes; stir. Bake another 30 minutes; stir. Bake another 15 minutes; stir. Bake another 15 minutes (they should be done at this point). Keep doing this until seed turn a light to medium brown (like the photo or little darker).

Once done, let cool for 30 minutes & then enjoy!
