no bake energy bites
My daughter is a health nut and a volleyball player which means we are always looking for quick snacks that travel well. These are a hit with her and her whole volleyball team, including the parents! The coach has me bring these every weekend we have tournaments because he can be sure the girls will eat them --- all. The recipe is easy to double, triple ... you get the point, of course I have to leave some home for my husband to eat later! Also these are easy to make gluten free! Original from gimmesomeoven.com

Ingredients
- 1 cup old fashion oats (dry)
- 2/3 cup toasted coconut
- 1/2 cup peanut butter
- 1/2 cup ground flax seed ( you may leave out without changing it much)
- 1/2 cup chocolate chips
- 1/3 cup honey
- 1 teaspoon pure vanilla extract
How To Make no bake energy bites

Step 1Stir all ingredients together in a medium bowl until thoroughly mixed.

Step 2Cover and let chill in the refrigerator for half an hour.

Step 3Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.)

Step 4Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls.
