Lynn's Healthy Cranberry/orange Oatmeal Cookies
makes about 3 doz (depending on how big)
bourbon vanilla (trader joes)
orange zest (or dried peel)
hazelnut meal (bolt's red mill....choices natural market or other organic food store)
rolled oats (thick cut)
1Cream butter and sugar in mixer.
2Add eggs, vanilla, orange extract ~ beat thoroughly.
3Mix flours, baking soda, cinnamon, and orange zest together before adding to wet mixture ~ mix well.
4Stir in oats, cranberries and walnuts. Mix well.
5Drop by tablespoon size blobs onto ungreased cookie sheet.
6Bake 10-12 minutes @ 350 degrees or until just golden brown.
7Cool 1 minute or so on cookie sheet.
8Eat and Enjoy!!!
