lynn's healthy cranberry/orange oatmeal cookies

I use as many organic ingredients as I can find but they're good with regular stuff too!

yield makes about 3 doz (depending on how big)

Ingredients

  • 1/2 pound butter, softened
  • 1 cup dark brown sugar
  • 2 - eggs
  • 1 teaspoon bourbon vanilla (trader joes)
  • 1 teaspoon orange extract
  • 1 tablespoon orange zest (or dried peel)
  • 3/4 cup whole wheat four
  • 3/4 cup hazelnut meal (bolt's red mill....choices natural market or other organic food store)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups rolled oats (thick cut)
  • 1 cup cranberries
  • 1 cup chopped walnuts

How To Make lynn's healthy cranberry/orange oatmeal cookies

  • Step 1
    Cream butter and sugar in mixer.
  • Step 2
    Add eggs, vanilla, orange extract ~ beat thoroughly.
  • Step 3
    Mix flours, baking soda, cinnamon, and orange zest together before adding to wet mixture ~ mix well.
  • Step 4
    Stir in oats, cranberries and walnuts. Mix well.
  • Step 5
    Drop by tablespoon size blobs onto ungreased cookie sheet.
  • Step 6
    Bake 10-12 minutes @ 350 degrees or until just golden brown.
  • Step 7
    Cool 1 minute or so on cookie sheet.
  • Step 8
    Eat and Enjoy!!! For smaller cookies (and bigger batch) cook 8-10 mins until golden brown.
