Ingredients

  • 1/2 lb
    butter, softened
  • 1 c
    dark brown sugar
  • 2
    eggs
  • 1 tsp
    bourbon vanilla (trader joes)
  • 1 tsp
    orange extract
  • 1 Tbsp
    orange zest (or dried peel)
  • 3/4 c
    whole wheat four
  • 3/4 c
    hazelnut meal (bolt's red mill....choices natural market or other organic food store)
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 3 c
    rolled oats (thick cut)
  • 1 c
    cranberries
  • 1 c
    chopped walnuts

How to Make Lynn's Healthy Cranberry/orange Oatmeal Cookies

Step-by-Step

  1. Cream butter and sugar in mixer.
  2. Add eggs, vanilla, orange extract ~ beat thoroughly.
  3. Mix flours, baking soda, cinnamon, and orange zest together before adding to wet mixture ~ mix well.
  4. Stir in oats, cranberries and walnuts. Mix well.
  5. Drop by tablespoon size blobs onto ungreased cookie sheet.
  6. Bake 10-12 minutes @ 350 degrees or until just golden brown.
  7. Cool 1 minute or so on cookie sheet.
  8. Eat and Enjoy!!!
    For smaller cookies (and bigger batch) cook 8-10 mins until golden brown.
