I decided to play around with a Chex Mix recipe one day and came up with this. I made the mistake of shipping a batch to my husband and some of his fellow soldiers while he was deployed. I learned all about supply and demand after that. I had to make double and triple batches and they still ate it faster than I could make it. Hope you enjoy it as much as we do. It's a definite keeper! This makes a big batch of Chex mix. It can be halved with no problems. Also, maple extract is pretty potent. If you'd like a stronger maple flavor, you can increase it to 3/4 tsp.

  • 12 oz
    cinnamon Chex cereal
  • 9 oz
    rice Chex cereal
  • 10 - 12 oz
    sliced almonds
  • 1 1/2 c
    white sugar
  • 1 1/2 c
    light corn syrup
  • 18 Tbsp
    butter, no substitute
  • 1 pinch
    salt
  • 1/2 tsp
    maple extract

  • Mix the cinnamon Chex, rice Chex, and almonds in a large plastic bowl.

  • Bring the sugar, corn syrup, salt, and butter to a boil.

    In a heavy saucepan over medium heat, bring the sugar, corn syrup, salt, and butter to a boil. Stir occasionally until it turns golden and coats the back of a spoon; approximately 4 1/2 - 5 minutes.
