golden zucchini-feta cakes

These are very simple to make and you may have them for any meal.I cannot take credit for recipe as I saw it in Chatelaine Mag.

Ingredients

  • 2 - medium zucchini
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1/2 cup all purpose flour
  • 2 tablespoons dill, fresh
  • 1/2 cup crumbled feta cheese
  • 2 slices green onions

How To Make golden zucchini-feta cakes

  • Step 1
    Grate zucchini (about 3 cups)with 1/2 tsp.salt;Let stand for 10 min in a colander. Whisk eggs with 1/2 c. flour and chopped fresh dill in med. bowl. Squeeze zucchini very well, discarding any liquid. stir zucchini in with egg mixture with the feta cheese and sliced green onions;
  • Step 2
    Season with pepper. Heat a large non-stick fry pan over medium. Add 2 tsp oil,then drop 1/4 c. portions of mixture onto skillet. Gently press down with back of spoon and cook til golden (about 3 min) each side.
