I love plantains, they are wonderful, a lovely starch; make sure to buy ripe plantains, they taste so much better. The unripe ones will have no flavor. (very bland) You'll know that they are ripe when they start to turn black. If they were bananas you would be making banana bread or cakes out of them. You will need to store the different stages of plantains separately. Green plantain should be refrigerated. Yellow to black should be kept at cool room temperature in a well ventilated area. Black plantain should be used as soon as possible.

Ingredients For fried plantains

  • 1 large, ripe plantains, peel
  • 2 tbsp butter, or oil
  • dash of salt, sea, fine
  • 1/4 cup sour cream, thick

How To Make fried plantains

    Slice your ripe plantain into long thin slices.

    Melt butter in frying pan and add plantains, fry them in a pan with butter, until brown on both sides. Watch carefully, they burn quickly.

    Remove from pan, sprinkle with sea salt and serve with sour cream on the side.
