Fried Plantains

I love plantains, they are wonderful, a lovely starch; make sure to buy ripe plantains, they taste so much better. The unripe ones will have no flavor. (very bland)

You'll know that they are ripe when they start to turn black. If they were bananas you would be making banana bread or cakes out of them.

You will need to store the different stages of plantains separately.

Green plantain should be refrigerated. Yellow to black should be kept at cool room temperature in a well ventilated area. Black plantain should be used as soon as possible.
