energy granola bars

Just made them today.. and they were fabulous!

Ingredients

  • 4 tablespoons butter
  • 1 cup dried cherries, blueberries, cranberries or raisins
  • 1/4 cup apple juice, milk, or water
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups old fashioned oats
  • 1 cup chopped favorite nuts
  • 2 teaspoons cinnamon
  • 1/2 teaspoon sea salt
  • 2 large eggs, lightly whisked
  • 1/2 cup honey

How To Make energy granola bars

  • Step 1
    Place dried fruit in a small bowl and stir in apple juice or other liquid and vanilla. Set aside for 20 minutes. Melt butter in a large saute pan over medium heat. Add the oats and nuts and saute, stirring constantly, for 3-4 minutes. Stir in cinnamon and salt and saute for an additional minute. Pour into large bowl. Stir the eggs and honey into the dried fruit mixture. Pour wet ingredients over dry...and stir till blended. Spread mixture into a 8x8 greased pan or parchment lined pan and Bake at 350* for 30 minutes or until golden brown and pulling away from sides. Cool on a rack, and cut into bars. Will stay fresh for 1 week.
