cranberry (christmas) cake
I was invited to a Christmas party in 2015,and was asked to bring something with Cranberries. With an over abundance of frozen cranberries I threw together some sugar, flour, eggs, butter and vanilla, added the cranberries frozen, packed it into a glass baking dish threw it in to the oven and prayed.: (I only had two and a half hours to get to the party) It looked pretty when I took it out of the oven so I prayed it would go over well. to my amazement I surprised myself and the cake was the talk of the party. When someone asked me what it's called I said; "Cranberry Cake?" Enjoy!!

Ingredients
- 3 large eggs
- 2 cups sugar
- 3/4 cup unsalted butter
- 1 teaspoon pure vanilla
- 2 cups flour
- 12oz. bags fresh frozen cranberries
- 1 tablespoon orange zest (optional)
How To Make cranberry (christmas) cake

Step 1Preheat your oven to 350 degrees F., grease a 9" x 13" glass baking dish and set aside. Gather and measure out your ingredients.

Step 2In a mixer fitted with at paddle attachment, beat the eggs and sugar until for about 5-7 ,minutes and slightly thickened and pale in color. the mixture should double in size and have a ribbon effect when you pull the paddle from the batter.

Step 3Add in the vanilla, then the butter in small chunks and beat for about 2 more minutes until incorporated into the egg mixture.

Step 4Stir in the flour in three increments as not to create a flour cloud and stir into the wet mixture until just incorporated: do not over mix.

Step 5Remove the batter from the mixer and stir in the frozen cranberries: Note: With the cranberries still frozen the dough will stiffen up very quickly and using you hand covered with a glove makes this a lot easier.

Step 6Scrape the mixture into the prepared 9" x 13" glass baking dish and spread evenly into the corners and to the edges of the dish.

Step 7Bake for 45-50 minutes or until the top becomes a nice even lite golden brown or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into the cake. Cut into 1" x 2" pieces....Enjoy!!

Step 8Notes: At Christmas you can add a bit of orange zest to the batter to make it more festive. Add the zest in step 3.
