Cornmeal muffins with sweet taste of whole kernel corn.

Ingredients

  • 1 1/2 cups milk
  • 7 tablespoons vegetable oil
  • 2 - eggs
  • 1 1/2 cups w.w. flour
  • 1 1/2 cups cornmeal
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup frozen(thawed) whole kernel corn

How To Make corny corn muffinns

  • Step 1
    Heat oven to 400*. Spray or grease muffin tins or use cupcake liners.
  • Step 2
    In medium bowl, beat milk, oil and eggs. Stir in remaining ingredients except corn just until flour is moistened. Fold in corn, Scoop in to muffin tins(1\2 -3\4 full).
  • Step 3
    Bake 16-18 minutes or until golden brown. Immediately remove from pan to wire rack. Serve warm or cool.
