applesauce snack cakes
I made these sweet treats to put in the kids' lunch boxes. I think they are healthier than store bought- no preservatives. This is a make-ahead recipe: Make the batter and then keep in the fridge until ready to bake!

Makes 2 1/2 dozen
Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 - eggs
- 2 teaspoons baking soda
- 1 teaspoon vanilla extract
- 2 cups applesauce
- 4 cups all purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 1/2 tablespoon ground cloves
How To Make applesauce snack cakes

Step 1Cream butter; gradually add sugar, beating well at medium speed. Add eggs, one at a time, beating well after each addition.

Step 2Stir soda and vanilla into applesauce. Combine flour and spices. Add to creamed mixture alternately with applesauce mixture, mixing after each addition. Cover batter and store in the refrigerator for up two weeks.

Step 3When ready to bake, spoon batter into paper-lined muffin pans (filling two-thirds full). Bake at 400 degrees for 15-18 minutes or until toothpick inserted in the center comes out clean. Remove from pans and cool on a wire rack.
