new years buttermilk-bourbon pancakes.
One new years eve some years ago, I hosted a party and was thinking of what would be good to serve some (probably) hungover people breakfast. I looked through the cabinets and found a bottle of really good bourbon. Bingo! I had an idea. So the next morning while sipping some coffee, ( w/a splash of said bourbon,) I made these small pancakes and they were such a smash! It's very important to use toasted pecans and real good bourbon, they really make a difference!

Ingredients
- 1 teaspoon pure vanilla extract, very important
- 2 tablespoons really good bourbon
- 1-1/2 cup + 3 tbsp buttermilk
- 3 tablespoons unsalted butter, melted
- 1-1/2 cup flour
- 1/2 cup toasted, finely chopped pecans
- 3 tablespoons coarsely chopped pecans for topping
- 2 tablespoons sugar
- 1 tablespoon light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup real good bourbon, for bourbon butter
- 1 tablespoon sugar
- 1-1/2 stick softened unsalted butter
- 3 tablespoons good molasses
- 1 pinch fine salt
- - good grade maple syrup, warmed, for serving
- 2 large eggs, ( almost forgot these, lol)
How To Make new years buttermilk-bourbon pancakes.

Step 1In medium bowl, whisk together eggs, vanilla, bourbon, buttermilk and 3 tbsp butter, melted. In lg bowl, whisk flour, finely chopped pecans, sugar, brown sugar, baking powder and baking soda.

Step 2Whisk the egg mix into the flour mix until just combined. Don't over mix. Cover bowl w/ a towel and let sit for 30 mins. Heat oven to 225, and line a baking sheet w/ parchment paper. Heat a lg skillet over medium heat. Add about a tbsp butter and let melt. Swish the butter around the pan to coat. Drop heaping 2 tbsp batter into skillet and then drop another 2 tbsp batter 2" apart into skillet. Bake until bubbles start to form on top. Flip pancakes over and cook another 1-2 minutes. Layer pancakes on baking sheet and place in oven to keep warm while you finish making remaining pancakes.

Step 3In small pan, pour in remaining bourbon and 1 tbsp sugar. Bring to a boil over high heat. Continue cooking until it is reduced by 1/2. Put aside to cool. In a food processor, add remaining butter and molasses. Add bourbon mix from cooled pan. Process until smooth. Pour into a bowl and cover. Put into refrigerator to set for a bit. When all pancakes are done, stack them up on a lg platter, spooning a little of the bourbon butter in between each pancake. Drizzle w/ warm syrup and sprinkle w/ remaining pecans.
