granola with blessings, from a dear friend
Making this is so worth while, it is easy to make, tastes super, and makes a good gift. The minister of our church got it from a friend, and she shared this recipe with me. I have made it many times. It keeps well in a tight plastic container, and it makes 3 pounds total. I use it on top of Greek Style Yogurt, or eat just a handful as a snack. I also have tossed a little into my pancake batter or muffin batter.

3 pounds of granola
Ingredients
- 1 box old-fashioned rolled oats; 6 cups
- 1 cup wheat germ
- 1 cup coconut
- 1 cup chopped nuts (i love pecans)
- 1 cup packed light brown sugar
- MIX ALL ABOVE TOGETHER.
- 1/2 cup oil
- 1/2 cup water
- 1 1/2 tablespoons vanilla extract
- 1/2 tablespoon salt
- MIX THESE FOUR INGREDIENTS, POUR SLOWLY OVER FIRST MIXTURE.
- 1 cup whole wheat flour
- MIX WELL AND ADD THE FLOUR.
- 1 cup *optional: raisins or dates or other chopped dried fruit.

Step 1Preheat the oven to 325 degrees. You will need two large baking sheets with low sides (jelly roll pans) spread the mixture out evenly.

Step 2Bake for 30-40 minutes, stirring occasionally;until light brown.

Step 3Cool completely, then pack in air-tight containers.

Step 4There are dried fruits you could add, any kind of nuts would be good. I LOVE THIS RECIPE!
