low calorie, gluten-free roasted onion dip

While watching the races today with Woody; I came up with this great onion dip. It was satifying and dilicious. Just enough to hold us over until dinner tonight. Took some over to my neighbor and she really liked it too. This will be a keep for our next party here at the house for sure.

Ingredients

  • 2 large vidallia or other sweet onions, peeled and quartered
  • 1 tablespoon olive oil, light
  • 1 teaspoon kosher salt, divided
  • 1 - whole garlic head
  • 1/3 cup reduced fat sour cream
  • 1/4 cup chopped freah parsley
  • 1 tablespoon fresh lemon juice from a lemon

How To Make low calorie, gluten-free roasted onion dip

  • Step 1
    Preheat your oven to 425
  • Step 2
    Place onions in a large bowl and drizzle with oil. Sprinkle with 1/2 teaspoon of kosher salt and toss to coat.
  • Step 3
    Remove white papery skin from garlic head (do not peel or separate cloves).
  • Step 4
    Wrap in foil and place onions on a baking sheet.
  • Step 5
    Place in preheated oven and bake for 1 hour. Remove from oven,unwrap and let cool for 10 minutes.
  • Step 6
    Chop onions and separate garlic cloves and squeese to extract garlic pulp. Discard skins.
  • Step 7
    Cover and chill in your refrigerator for 1 hour.
  • Step 8
    Remove from frigerator and place dip in center of serving platter with mixed fresh vegetables. and gluten free rice crackers
