healthy graham cracker ice cream sandwiches

I wrap these is waxed paper so the kids have fun opening them and because they keep better in the freezer. They never last long when I make them. So no need in worry about frost on them. They never know that they aren't ice cream and are more healthy for them. ( I won't tell )These are great any time of the year and they are so easy to make.

Ingredients

  • 2 cups lowfat plain yogurt
  • 1 cup sugar
  • 1 cup lowfat (1% buttermilk)
  • 2 tablespoons lemon juice
  • - grated zest of one lemon
  • 16 - lowfat graham crackers, broken in half (32 squares)

How To Make healthy graham cracker ice cream sandwiches

  • Step 1
    In a large bowl, whisk together the yogurt, sugar, buttermilk, lemon juice and lemon zest.
  • Step 2
    Cover the bowl and freeze for 1 to 1 1/2 hours or until mixture starts to thicken.
  • Step 3
    Remove mixture from freezer and scoop out about 1/4 cup of mixture and place between two graham cracker squares and gently press together.
  • Step 4
    Wrap each in waxed paper and freeze for 30 minutes or until firm.
  • Step 5
    *Never last long enough to know how long you can keep them in the freezer. If sealed in a freezer bag; I would keep them in the freezer no longer then one week to prevent frost on them.
