As mentioned in the directions, roll the dough out as thin as possible. Really thin. After baking, you'll want to break the cracker into serving pieces. You should hear a little cracking sound when breaking. If you hear or feel a tearing sensation, place those pieces back on the cooking sheet and bake for another few minutes so they crisp up.

Ingredients For fennel crackers

  • 2 c
    flour
  • 1/2 tsp
    baking powder
  • 1 stick
    butter softened
  • 1/2 c
    milk
  • 1 lg
    egg
  • 1 Tbsp
    fennel seeds
  • 1/2 tsp
    kosher salt

How To Make fennel crackers

    In a bowl, using a fork, mix the flour and baking powder. Mash in butter until blended. Add the milk, fennel seeds and egg and stir until a dough begins to form.

    Turn the dough out onto a lightly floured work surface and lightly knead until smooth. Flatten into a disk, divide into 4 parts, wrap each in plastic and refrigerate until chilled, at least an hour.

    Preheat oven to 400.

    Roll out 1 part directly onto a lightly greased cookie sheet or silicone baking mat, making it as thin as possible. Sprinkle with 1/8 of the salt and use the rolling pin to force it into the dough.

    Bake 8 to 10 minutes until golden brown. Repeat with 3 remaining parts.
