Fennel Crackers

Chris Lidberg

As mentioned in the directions, roll the dough out as thin as possible. Really thin. After baking, you'll want to break the cracker into serving pieces. You should hear a little cracking sound when breaking. If you hear or feel a tearing sensation, place those pieces back on the cooking sheet and bake for another few minutes so they crisp up.

How to Make Fennel Crackers

  1. In a bowl, using a fork, mix the flour and baking powder. Mash in butter until blended. Add the milk, fennel seeds and egg and stir until a dough begins to form.
  2. Turn the dough out onto a lightly floured work surface and lightly knead until smooth. Flatten into a disk, divide into 4 parts, wrap each in plastic and refrigerate until chilled, at least an hour.
  3. Preheat oven to 400.
  4. Roll out 1 part directly onto a lightly greased cookie sheet or silicone baking mat, making it as thin as possible. Sprinkle with 1/8 of the salt and use the rolling pin to force it into the dough.
  5. Bake 8 to 10 minutes until golden brown. Repeat with 3 remaining parts.
