1/2 lbbutter, room temperature

1/2 lbblock sharp cheddar cheese, room temperature

2 1/2 call purpose flour

1 tspsalt

1/2 tspred chili pepper

1 cpecans, chopped
How to Make Cheese Wafers
- In a large bowl, sift together flour, salt and red chili pepper. In a mixing bown, cream butter and cheese together. Slowly add flour mixture to creamed mixture at slow speed scraping sides often.
- After all flour mixture has been mixed in, take out of machine and fold in nuts. Shape dough into to logs and wrap in waxed paper. Chill for at least 2 hours.
- When ready to bake, heat oven to 375. Slice logs as you would cookies; about 1/8 to 1/4 inches thick. Cook on un-greased cookie sheet for 8 - 10 minutes or until they turn golden brown.
