It is tradition in our family to make these and take them on vacation every year. They are so delicious that we have to make three batches but still have to ration them out! We like spicy so we add more than what the recipe calls for.

Ingredients

  • 1/2 pound butter, room temperature
  • 1/2 pound block sharp cheddar cheese, room temperature
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon red chili pepper
  • 1 cup pecans, chopped

How To Make cheese wafers

  • Step 1
    In a large bowl, sift together flour, salt and red chili pepper. In a mixing bown, cream butter and cheese together. Slowly add flour mixture to creamed mixture at slow speed scraping sides often.
  • Step 2
    After all flour mixture has been mixed in, take out of machine and fold in nuts. Shape dough into to logs and wrap in waxed paper. Chill for at least 2 hours.
  • Step 3
    When ready to bake, heat oven to 375. Slice logs as you would cookies; about 1/8 to 1/4 inches thick. Cook on un-greased cookie sheet for 8 - 10 minutes or until they turn golden brown.
