grubbin' good spicy guacamole

Guacamole has always been a family favorite, but they like my homemade over the ones served in Mexican restaurants. None of us can stand the store bought ones either..just green color and no avacado taste...gross. It is so easy to make and I always have homemade pico de gallo on hand to add to it. I think that helps make the flavor awesome. Enjoy!

Ingredients

  • approx 4 cups avacodo, slightly mashed (about 4 large or 7-8 small)
  • 2 - limes, juiced
  • 3 lg or 5 - green onions, diced small
  • 1 cup grape tomatoes, crushed
  • 2 - 4 tablespoons pico de gallo, to taste
  • 1/4 cup sour cream
  • 1/4 cup philly cooking cream or softened cream cheese
  • 1/4 teaspoon each of seasoned salt, pepper, garlic powder, cumin, chili powder, or to taste
  • 1/8 teaspoon cayenne pepper

How To Make grubbin' good spicy guacamole

  • Step 1
    Peel, pit and mash avacados in a large bowl. I crush the tomatoes with my immersion blender. Add all other ingredients and stir to combine. Taste and adjust flavors to suit your taste. So that the guacamole doesn't turn brown, place plastic wrap directly onto the surface and press out any air bubbles. Store leftovers in an airtight container with the plastic wrap pressed on surface.
  • Step 2
    To make chips: Cut 36 corn tortillas into 6 wedges with a pizza cutter. Heat vegetable oil to 375 degrees. Fry tortillas and drain on paper towels.Lightly sprinkle with salt. My family likes some made with corn and some made with flour tortillas. Enjoy!
