I am a stay at home mom with a home-based business. During the day I get so busy in my routine of doing that I forget to take time to eat. I like to have this on hand to snack with chips so I don't have to stop and eat a meal. I also like stuffing hard boiled eggs with this. Festive for the holidays and a great go-to anytime snack.

Pineapple adds a hint of sweetness while jalapenos give this guac a little kick. Traditional cilantro gives the dip a fresh taste. Serve with some tortilla chips (and maybe your favorite margarita!) and you have an easy snack.

Ingredients

  • 2 medium avocados, halved and seeded
  • 1/4 cup bottled green salsa verde
  • 1 tablespoon sour cream
  • 1/2 cup finely chopped fresh pineapple, or canned crushed pineapple-drained
  • 1/2 cup black beans, drained and rinsed
  • 1 small jalapeno pepper, seeded and diced
  • 2 tablespoons minced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon minced garlic
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 cup shredded Monterey Jack cheese

How To Make giddyup guacamole

  • Mashed avocados in a bowl.
    Step 1
    In a large bowl, mash the avocados.
  • Salsa and sour cream added to the avocado.
    Step 2
    Stir in salsa and sour cream until combined.
  • The remaining ingredients mixed into the avocado.
    Step 3
    Stir in pineapple, beans, jalapeno, onion, cilantro, garlic, lime juice, salt, and cumin.
  • Bowl covered to chill.
    Step 4
    Cover and chill for 2 hours or until ready to serve.
  • A scoop of Giddyup Guacamole on a chip.
    Step 5
    Sprinkle with Monterey Jack cheese. Serve with tortilla chips.
