I don't remember where I got this recipe but I know it has been a family favorite since the early 70's when I first started making it.

Ingredients
- 3 cups zuchini sliced 1/4" thick
- 1/2 cup diced red onion
- 3 cloves garlic, minced
- 1- 8oz cans tomato sauce
- 1/2 cup parmesan cheese- shredded
- 2 tablespoons olive oil
How To Make zuchini parmesan

Step 1In a saute pan or frying pan saute the onion and garlic till soft, about 5 min on medium heat.

Step 2Add the zuchini and continue sauteing until lightly browned.

Step 3Add the can of tomato sauce and toss lightly until hot.

Step 4Sprinkle the shredded parmesan cheese over the top and when it melts its ready. The zuchini should not be swimming in tomato sauce, it should just be coating the squash so you might have to add more squash or less tomato sauce to make it the right consistancy.
