zuchini casserole
A few years back my husband had decided to plant a zucchini plant by each post surrounding our back yard.... I'm thinking about 40 plants. Well... anyone that has raised zucchini knows what happens with zucchini. We gave zucchini to anyone that would take it. I then started making this casserole and giving people samples of how to use the zucchini just to get of it. Many people in the small community loved this recipe.

Ingredients
- 6 cups zucchini, peeled and cut into chunkc
- 1 cup carrots, chopped
- 1 medium onions, peeled and chopped
- 1 package stuffing mix, corn bread
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 cup cheese, shredded
- 1 pound ground pork, or turkey (optional)
How To Make zuchini casserole

Step 1Brown meat in a pan and drain any grease.

Step 2Cut up zucchini, carrots and onion. Put in a pot and add enough water to cover. Cook till tender; then drain.

Step 3In another pot, make stuffing as directed on package.

Step 4Put vegetables in a baking dish, add soup, sour cream, and browned meat. Mix together gently. sprinkle cheese on vegetable mixture, then top with stuffing mix.

Step 5Bake at 350 for 30 minutes. Remove from oven and let stand for about 5 minutes before serving.
