Ingredients
- 1 cup walnuts, divided
- 6 - medium zucchini, cut in 1/2 inch pieces
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper, freshly ground
How To Make zucchini with walnuts

Step 1Chop 3/4 cup of the walnuts..set aside.

Step 2Saute the zucchini in the butter & olive oil until it is tender but not crisp, shaking the pan & tossing the zucchini with a wooden spoon so that it cooks evenly.

Step 3Pour off the butter & oil & add the chopped walnuts, salt & pepper to the drained zucchini. When the walnuts are well blended & heated, garnish with the remaining nuts & serve.
