We have a garden each and every year and we just love the fresh veggies. I think I have made zucchini dishes everyway imaginable and still find more each year. This one is quick and easy while the chicken or other meat is on the grill.
Saute onion in Ovoo until transluscent, add garlic clove and saute.
Add rest of ingredients, fresh parsley, and S&P to taste.
Cover and simmer till vegetables are tender.
Place in serving dish and enjoy.
