zucchini tots
These little "tater tots" are so crispy and tasty. And so much more healthy than real tator tots! They smell wonderful while baking. The recipe calls for the use of a 12 cup mini muffin pan- which I do not have. So I used my regular muffin pan and made 6 large ones. They were a hit! Next time I'm doubling the recipe and making 12 large. ;)

Ingredients
- 1 cup zucchini, grated
- 1 - egg
- 1/4 cup diced yellow onion
- 1/4 cup shredded cheddar cheese
- 1/4 cup italian bread crumbs
- - salt
- - pepper
How To Make zucchini tots

Step 1Preheat oven to 400. Prepare either a mini muffin pan (you will get 12 tots) or a regular muffin pan (you will get 6 large tots) with cooking spray.

Step 2Place the grated zucchini in a paper towel or towel and drain off the excess water. This is an important step so you don't end up with soggy tots.

Step 3In a bowl, combine the zucchini, egg, bread crumbs, onion, cheese, salt, and pepper. Place into the prepared muffin tins.

Step 4Bake for 15-20 minutes, until golden and really crispy.
