zucchini stuffed with veggie sausage

My hubby is a pescatarian,(Vegan who eats fish),so i subsituted veggie sausage crumbles for the Italian sweetsausage and i must say,theres not much difference in taste or texture!!

Ingredients

  • 3 medium zucchini
  • 1/4 cup bread crumbs, seasoned
  • 1/4 cup sun dried tomatoes
  • 2 tablespoons fresh chopped parsley
  • 1 1/4 cups veggie crumbles
  • 2 cloves garlic, minced
  • - salt and pepper to taste
  • 1/4 cup parmesan or romano cheese
  • 1 1/2 tablespoons feta cheese
  • 2 tablespoons olive oil, extra virgin
  • - red pepper flakes, optional

How To Make zucchini stuffed with veggie sausage

  • Step 1
    Preheat oven to 375*
  • Step 2
    Cut zucchini in half lengthwise.
  • Step 3
    Parboil halves until just tender.Scoop out pulp and reserve shells.
  • Step 4
    In a mixing bowl,chop pulp and add bread crumbs,sun dried tomatoes,parsley,crumbled veggie sausage,garlic,salt and pepper,and grated cheeses.
  • Step 5
    Fold in feta cheese.
  • Step 6
    Mound shells with mixture. Place shells close together in a baking dish.Drizzle with olive oil.
  • Step 7
    Loosely covered with foil for first 10 minutes.Bake till heated through,25minutes.
  • Step 8
    Serve with red pepper flakes at table
  • Step 9
    NOTE:if desired,before serving sprinkle tops wih extra bread crumbs and cheese,and put in broiler to brown the tops.
