My hubby is a pescatarian,(Vegan who eats fish),so i subsituted veggie sausage crumbles for the Italian sweetsausage and i must say,theres not much difference in taste or texture!!

bread crumbs, seasoned
1/4 c
sun dried tomatoes
2 Tbsp
fresh chopped parsley
1 1/4 c
veggie crumbles
2 clove
garlic, minced
salt and pepper to taste
1/4 c
parmesan or romano cheese
1 1/2 Tbsp
feta cheese
2 Tbsp
olive oil, extra virgin
red pepper flakes, optional

How to Make Zucchini Stuffed With Veggie Sausage


  • 1Preheat oven to 375*
  • 2Cut zucchini in half lengthwise.
  • 3Parboil halves until just tender.Scoop out pulp and reserve shells.
  • 4In a mixing bowl,chop pulp and add bread crumbs,sun dried tomatoes,parsley,crumbled veggie sausage,garlic,salt and pepper,and grated cheeses.
  • 5Fold in feta cheese.
  • 6Mound shells with mixture. Place shells close together in a baking dish.Drizzle with olive oil.
  • 7Loosely covered with foil for first 10 minutes.Bake till heated through,25minutes.
  • 8Serve with red pepper flakes at table
  • 9NOTE:if desired,before serving sprinkle tops wih extra bread crumbs and cheese,and put in broiler to brown the tops.
