My hubby is a pescatarian,(Vegan who eats fish),so i subsituted veggie sausage crumbles for the Italian sweetsausage and i must say,theres not much difference in taste or texture!!

  • 3 medium
  • 1/4 c
    bread crumbs, seasoned
  • 1/4 c
    sun dried tomatoes
  • 2 Tbsp
    fresh chopped parsley
  • 1 1/4 c
    veggie crumbles
  • 2 clove
    garlic, minced
  • ·
    salt and pepper to taste
  • 1/4 c
    parmesan or romano cheese
  • 1 1/2 Tbsp
    feta cheese
  • 2 Tbsp
    olive oil, extra virgin
  • ·
    red pepper flakes, optional

How to Make Zucchini Stuffed With Veggie Sausage


  1. Preheat oven to 375*
  2. Cut zucchini in half lengthwise.
  3. Parboil halves until just tender.Scoop out pulp and reserve shells.
  4. In a mixing bowl,chop pulp and add bread crumbs,sun dried tomatoes,parsley,crumbled veggie sausage,garlic,salt and pepper,and grated cheeses.
  5. Fold in feta cheese.
  6. Mound shells with mixture. Place shells close together in a baking dish.Drizzle with olive oil.
  7. Loosely covered with foil for first 10 minutes.Bake till heated through,25minutes.
  8. Serve with red pepper flakes at table
  9. NOTE:if desired,before serving sprinkle tops wih extra bread crumbs and cheese,and put in broiler to brown the tops.
