This salad was really easy to make and it came together in almost no time. The key to this salad though is letting it chill in the fridge for a couple of hours to let the flavors come out and mingle so you will want to plan on making it ahead of time. The sweet carrot, fresh green veggies, tart lemon and herbs really come together to make this salad vibrant, light and fresh. This salad is nice and refreshing when served chilled from the fridge on warm summer day, like I did this Labor Day Weekend.

Ingredients

  • 2 cups zucchini grated
  • 1 cup carrot grated
  • 1 cup cucumber grated
  • 1 - handful chopped parsley
  • 1 teaspoon mint, dried
  • 1 teaspoon dill, dried
  • 1/2 cup lemon, juice and zest
  • 1 tablespoon olive oil, extra virgin
  • 1 clove garlic grated
  • - salt and pepper to taste

How To Make zucchini salad

  • Step 1
    Mix the zucchini, carrots, cucumber, parsley, mint, and dill in a large bowl.
  • Step 2
    Mix the lemon juice, zest, olive oil, garlic, salt and pepper in a small bowl.
  • Step 3
    Toss the salad and the dressing.
  • Step 4
    Chill in the fridge for several hours to overnight before serving.
