zucchini pizza's

My grandmother made this with eggplants and I thought I would try it with zucchini since they are so abundant this time of year.

Ingredients

  • 4 medium zucchini
  • 1/2 cup black olives, sliced
  • 1-1/2 cup marinara sauce
  • 1/2 cup olive or canola oil
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup basil, fresh, "chiffonaded" or sliced thinly
  • 1 tablespoon chopped fresh garlic
  • - salt and pepper to taste

How To Make zucchini pizza's

  • Step 1
    Wash and pat dry the zucchini. Slice in half lengthwise and place on an oiled cookie sheet pan. You may need to cut a bit off the rounded side to help the zucchini lay flat.
  • Step 2
    Top each zucchini with a brush of oil and sprinkle with salt and pepper. Top with marinara sauce,garlic, olives, basil and cheese.You may choose to top with a bit more oil.Bake at 350-375 degrees for 15 minutes or until tender.Serve warm.
