This recipe is a great way to get the kids to eat their vegetables because you dip them in ranch dressing or pizza sauce. It's healthy because it's baked not fried. It just looks fried. Tastes great, and my family loves these zucchini fries.

These baked zucchini fries have a nice crunchy coating that's perfectly seasoned. The method used in this recipe helps the zucchini fries maintain their Panko crumb coating. Serve with marinara sauce or ranch dressing, for an easy appetizer or snack.

Ingredients

  • 1/2 cup Panko bread crumbs
  • 5 small zucchini or as many as you like
  • 1 teaspoon Italian seasoning
  • pinch salt
  • pinch pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs

For step 5, we opted to use parchment paper because we've found that prevents bread crumbs from sticking best. The sserving size depends on the size of the zucchini.
  • Panko crumbs, Parmesan cheese, and spices in a bowl.
    Step 1
    Combine the Panko crumbs, spices, and cheese.
  • Whisking eggs in a shallow dish.
    Step 2
    Put eggs in a shallow pie plate and whisk eggs.
  • Trimming zucchini and cutting into spears.
    Step 3
    Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be.
  • Zucchini dipped in egg and Panko crumbs.
    Step 4
    Dip a few of the zucchini sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture.
  • Coated zucchini on a cookie sheet.
    Step 5
    Spray a cookie sheet with non stick cooking spray. Place zucchini on cookie sheet.
  • Flipping partially baked zucchini.
    Step 6
    Bake at 425 degrees for 10 minutes. Take out and turn zucchini over.
  • Zucchini Fries baked until golden brown.
    Step 7
    Bake for another 10 minutes or until coating is golden brown. Serve with pizza sauce or ranch dressing.
