These baked zucchini fries have a nice crunchy coating that's perfectly seasoned. The method used in this recipe helps the zucchini fries maintain their Panko crumb coating. Serve with marinara sauce or ranch dressing, for an easy appetizer or snack.

Ingredients
- 1/2 cup Panko bread crumbs
- 5 small zucchini or as many as you like
- 1 teaspoon Italian seasoning
- pinch salt
- pinch pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup grated Parmesan cheese
- 2 large eggs

For step 5, we opted to use parchment paper because we've found that prevents bread crumbs from sticking best. The sserving size depends on the size of the zucchini.

Step 1Combine the Panko crumbs, spices, and cheese.

Step 2Put eggs in a shallow pie plate and whisk eggs.

Step 3Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be.

Step 4Dip a few of the zucchini sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture.

Step 5Spray a cookie sheet with non stick cooking spray. Place zucchini on cookie sheet.

Step 6Bake at 425 degrees for 10 minutes. Take out and turn zucchini over.

Step 7Bake for another 10 minutes or until coating is golden brown. Serve with pizza sauce or ranch dressing.
