Zucchini Fries

This recipe is a great way to get the kids to eat their vegetable. Because you dip it in ranch dressing or pizza sauce. It's healthy because its baked not fried. It just looks like fried. Tastes great, My family loves it.

One large zucchini cut in half and quartered serves about two servings.

  • 1/2 cup
    panko bread crumbs
  • 5
    small zucchini or as many as you like
  • 1 tsp
    italian seasoning
  • pinch
  • pinch
  • 1/2 tsp.
    garlic powder
  • 1/2 tsp.
    onion powder
  • 1/4 cup.
    crumbled parmesan cheese
  • 2

How to Make Zucchini Fries


  1. Combine bread crumbs,spices and cheese. Put eggs in a shallow pie plate and whisk eggs.
  2. Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be.
  3. Dip a few of the zucchinis sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture.
  4. Spray a cookie sheet with non stick cooking spray and place zucchini on cookie sheet.
  5. Bake at 425 degrees for 10 minutes, take out and turn zucchini over and bake another 10 minutes or until coating is golden brown.
  6. Serve with pizza sauce or ranch dressing.
