zucchini boats
Put these on a well oiled BBQ grille and cook these doing the indirect grilling method. I am sorry I cannot tell you how long to cook these….you’ll have to judge this for your self…..the zucchini should be soft. If you have more filling than you need….DON’T THROW IT AWAY…freeze it for soup or something…… You can also freeze these once they are filled. Which is a grate time saver.

-
Step 1Slice the zucchini in half length wise…scoop out the “meat” and chop it up.
-
Step 2Chop the onion.
-
Step 3Put the tomatoes into a small pan and add the zucchini meat, onion, garlic, pepper and salt.
-
Step 4Simmer on low till the onion is almost done and the liquid is all gone. Let this cool completely.

-
Step 7You can fill these with as much of the filling as you like. I divided it and used it all.
