Ingredients

  • 3 cups thinly-sliced unpared zucchini (or it can be grated if you want to take the extra time and you have people who think they dont like zucchini)
  • 1 cup baking mix (i use heart healthy bisquick)
  • 1/2 cup finely-chopped onion (again can be grated)
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt and pepper
  • 1/2 teaspoon dried marjoram or oregano leaves
  • 1 clove garlic minced
  • 1/2 cup olive oil, extra virgin
  • 4 large eggs, slightly beaten

How To Make zucchini appetizers

  • Step 1
    Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 by 9 by 2 inches.
  • Step 2
    Stir together all ingredients. Spread in pan. Bake about 25 minutes or until golden brown.
  • Step 3
    Cut into 2-inch squares; cut squares diagonally in half into triangles.
  • Step 4
    This recipe yields 4 dozen.
