Ingredients
- 3 cups thinly-sliced unpared zucchini (or it can be grated if you want to take the extra time and you have people who think they dont like zucchini)
- 1 cup baking mix (i use heart healthy bisquick)
- 1/2 cup finely-chopped onion (again can be grated)
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon dried marjoram or oregano leaves
- 1 clove garlic minced
- 1/2 cup olive oil, extra virgin
- 4 large eggs, slightly beaten
How To Make zucchini appetizers

Step 1Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 by 9 by 2 inches.

Step 2Stir together all ingredients. Spread in pan. Bake about 25 minutes or until golden brown.

Step 3Cut into 2-inch squares; cut squares diagonally in half into triangles.
