Ingredients For zucchini appetizers

  • 3 c
    thinly-sliced unpared zucchini (or it can be grated if you want to take the extra time and you have people who think they dont like zucchini)
  • 1 c
    baking mix (i use heart healthy bisquick)
  • 1/2 c
    finely-chopped onion (again can be grated)
  • 1/2 c
    grated parmesan cheese
  • 2 Tbsp
    chopped fresh parsley
  • 1/2 tsp
    salt and pepper
  • 1/2 tsp
    dried marjoram or oregano leaves
  • 1 clove
    garlic minced
  • 1/2 c
    olive oil, extra virgin
  • 4 lg
    eggs, slightly beaten

How To Make zucchini appetizers

  • 1
    Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 by 9 by 2 inches.

    Stir together all ingredients. Spread in pan. Bake about 25 minutes or until golden brown.

    Cut into 2-inch squares; cut squares diagonally in half into triangles.

    This recipe yields 4 dozen.
