This zucchini and squash au gratin is an amazing side dish and cooks up so quickly that it won't heat up your kitchen. For an even better taste, smoke it in the smoker!

Squash is hard to dislike and with this zucchini and squash au gratin, it's near impossible. The freshness of the zucchini and yellow squash is accented (not hidden) by the addition of cream and cheese. Shallots and garlic are sauteed in butter and add a sweet onion flavor to the side dish.

Ingredients For zucchini and squash au gratin

  • 2 Tbsp
    butter
  • 2 md
    shallots, minced
  • 1 tsp
    minced garlic
  • 1 lg
    zucchini, sliced
  • 1 lg
    yellow squash, sliced
  • 1/2 c
    heavy cream
  • salt and pepper, to taste
  • sprinkle of oregano
  • Parmesan cheese, to taste
  • shredded cheese, just a handful to sprinkle

How To Make zucchini and squash au gratin

  • Preheat oven to 450 degrees F.

    Preheat oven to 450 degrees F.
  • Saute shallots and garlic in butter.

    In a large skillet, saute shallots and garlic in the butter. Cook until the shallots are translucent.
  • Add sliced zucchini and squash to a skillet with heavy cream and seasonings.

    Add zucchini, yellow squash, and heavy cream. Add salt, pepper, oregano, and Parmesan cheese.
  • Cook until the mixture is bubbly.

    Cook 8 to 10 minutes or until mixture is bubbly.
  • Transfer to an oven-safe dish and sprinkle with cheese.

    Transfer to an oven-safe baking dish. Sprinkle with a little more Parmesan and the shredded cheese.
