My neice makes this every year for our family holiday potluck. MMMM-good.

Ingredients

  • 1 cup uncooked rice
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 - ribs of celery, diced
  • 1/2 cup butter
  • 1 tablespoon sugar
  • 1-2 medium jalapeno peppers, seeded and diced
  • 2 cans cream style corn (17 oz each)
  • 1 cup grated cheddar cheese

How To Make zingy corn casserole (sallye)

  • Step 1
    Cook rice according to package directions, set aside Preheat oven to 325º Grease a 2 quart casserole dish (9" x 13")
  • Step 2
    Saute onion, bell pepper and celery in butter until tender Combine with all other ingredients in a large bowl, mix well
  • Step 3
    Pour ingredients into greased casserole dish and place in oven Bake at 325º for 30 minutes
