zesty brocolli casserole

Every Thanksgiving I like to make this. It is definitely my favorite casserole recipe!The touch of horseradish gives it just enough zing! NOTE: You may use frozen broccoli for a quicker prep time. I believe the original recipe called for it but I prefer fresh. Also, the crackers I use are either Ritz or Townhouse.

Ingredients

  • 2 - heads of fresh broccoli
  • 1 can cream of mushroom soup
  • 1 1/2 cups cheddar cheese, shredded
  • 1 - egg, beaten
  • 1/4 cup milk
  • 1/4 cup mayonnaise
  • 1 tablespoon horseradish
  • 2 tablespoons butter, melted
  • 1/2 cup cracker crumbs

How To Make zesty brocolli casserole

  • Step 1
    Cook fresh broccoli.Drain. Cut up and set aside. In small bowl mix together mushroom soup, cheese, beaten egg, milk, mayonnaise and horseradish. Toss in broccoli and mix well.
  • Step 2
    Pour into buttered 1 1/2 qt. casserole dish. Crush crackers and sprinkle over casserole. Drizzle with melted butter.
  • Step 3
    Bake for 45 minutes.
