Will post picture next time I make this- it got eaten before I remembered to take one! This is easy to make if you buy the kale already cut and cleaned, and so healthy with lots of anti-oxidants and good vitamins

Ingredients

  • 2 Tbsp
    olive oil
  • 1 small
    onion, diced
  • 2 clove
    garlic, minced
  • 0.5 Tbsp
    dijon or other mustard
  • 2 tsp
    sugar or other sweetener to taste
  • 1 Tbsp
    apple cider vinegar
  • 1 1/2 c
    chicken broth
  • 4 c
    stemmed, torn & rinsed kale
  • 0.25 c
    dried cranberries
  • 0.25 c
    sliced almonds or other nuts
  • 1 dash(es)
    salt & pepper to taste

How to Make Wilted kale with cranberries

Step-by-Step

  1. Heat olive oil in a large pot over medium heat. Stir in the onion and garlic; cook and stir until the onion softens and turns translucent, about 5 minutes. Stir in the mustard, sugar, vinegar and chicken broth, and bring to a boil over high heat. Stir in the kale, cover, and cook 5 minutes until wilted.
  2. Stir in the dried cranberries and continue boiling, uncovered, until the liquid has reduced by about half and the cranberries have softened, about 15 minutes. Season to taste with salt and pepper. Sprinkle with almonds before serving.
