wilted kale with cranberries

Will post picture next time I make this- it got eaten before I remembered to take one! This is easy to make if you buy the kale already cut and cleaned, and so healthy with lots of anti-oxidants and good vitamins

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 0.5 tablespoon dijon or other mustard
  • 2 teaspoons sugar or other sweetener to taste
  • 1 tablespoon apple cider vinegar
  • 1 1/2 cups chicken broth
  • 4 cups stemmed, torn & rinsed kale
  • 0.25 cup dried cranberries
  • 0.25 cup sliced almonds or other nuts
  • 1 dash salt & pepper to taste

How To Make wilted kale with cranberries

  • Step 1
    Heat olive oil in a large pot over medium heat. Stir in the onion and garlic; cook and stir until the onion softens and turns translucent, about 5 minutes. Stir in the mustard, sugar, vinegar and chicken broth, and bring to a boil over high heat. Stir in the kale, cover, and cook 5 minutes until wilted.
  • Step 2
    Stir in the dried cranberries and continue boiling, uncovered, until the liquid has reduced by about half and the cranberries have softened, about 15 minutes. Season to taste with salt and pepper. Sprinkle with almonds before serving.
