Had this at a wedding rehearsal dinner in San Antonio and fell in LOVE.

Wow, this is a flavorful summer salad. The blend of sweet watermelon, peppery arugula, and creamy Feta cheese are all brought together with a tangy balsamic glaze. Serve this alongside the grilled chicken for a fabulous summer side dish. We found balsamic glaze with vinegar at our store. But, if you can't find it, it's very easy to make at home.

Ingredients

  • 1 package baby arugula (5 oz)
  • 2 large tomatoes, washed and cut up into 1 inch cubes
  • 1 package crumbled Feta cheese (7 oz)
  • 8 cups seedless watermelon cut into 3/4 inch cubes
  • 2 tablespoons balsamic vinegar glaze

How To Make watermelon, tomato, feta and arugula salad w/ balsamic glaze

  • Tomatoes and watermelon chopped.
    Step 1
    Chop tomatoes and watermelon.
  • Assembled Watermelon Feta salad.
    Step 2
    Mix all ingredients together and drizzle with balsamic glaze and sprinkle with pepper. I use extra balsamic glaze but use it to taste. :)
  • Step 3
    Balsamic glaze can usually be found in the vinegar section of your local grocery store but if you can't find it, you can make it yourself: Boil 3/4 cup balsamic vinegar in a small saucepan until reduced to 3 tablespoons (about 6 to 7 minutes).
