2 lbsliced zuchinni
1 ccarrots, coarsely grated
1 largeonion, chopped
8 ozpackage herb stuffing mix (pepperidge farm)
1 ccondensed cream of chicken or cream of mushroom soup
1 csour cream
2 cextra sharp cheddar cheese, grated, and divided
How to Make Vegtable Casserole
- Boil veggies 5 minutes and drain.
- Mix sour cream, soup and 1 cup cheddar cheese.
- Melt butter, stir in stuffing mix. Spread half on the bottom of a greased casserole.
- Spoon on veggie mix.
- Top with rest of stuffing mix, then cheese.
- Bake 30 to 40 minutes in a pre heated 350 degree oven until bubbly ans starting to brown
