OK I know, this has no redeemable qualities, but my grandsons Mike and Dan give thumbs up on this one. It does have veggies in it.

Ingredients
- 2 pounds sliced zuchinni
- 1 cup carrots, coarsely grated
- 1 large onion, chopped
- 8 ounces package herb stuffing mix (pepperidge farm)
- 1/2 cup butter
- 1 cup condensed cream of chicken or cream of mushroom soup
- 1 cup sour cream
- 2 cups extra sharp cheddar cheese, grated, and divided
How To Make vegtable casserole

Step 1Boil veggies 5 minutes and drain.

Step 2Mix sour cream, soup and 1 cup cheddar cheese.

Step 3Melt butter, stir in stuffing mix. Spread half on the bottom of a greased casserole.

Step 4Spoon on veggie mix.

Step 5Top with rest of stuffing mix, then cheese.

Step 6Bake 30 to 40 minutes in a pre heated 350 degree oven until bubbly ans starting to brown
