Ingredients
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup zucchini, grated
- 1 cup carrots, sliced and steamed
- 1 cup broccoli florets, steamed
- 3/4 cup oatmeal, uncooked
- 1 slice whole wheat bread, crumbled
- 3 tablespoons oat bran
- 3 ounces cheddar cheese, shredded
- 1/2 cup tomato sauce
- 1 - egg
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon sage
- 1/2 teaspoon dried thyme
- 1/4 cup chopped parsley
- 6 tablespoons parmesan cheese, grated
How To Make veggie garden loaf

Step 1Preheat oven to 375 degrees.

Step 2In small skillet heat olive oil and saute onion until translucent, about 5 minutes.

Step 3In large bowl combine zucchini, carrot, broccoli, oatmeal, breadcrumbs, oat bran and cheese.

Step 4In small bowl beat together tomato sauce, egg and egg white, seasonings and parmesan.

Step 5Combine all ingredients and stir thoroughly to mix.

Step 6Turn mixture into 9x5-inch loaf pan coated with non-stick spray.

Step 7Bake 30 to 35 minutes, or until firm.

Step 8Let stand 15 minutes before slicing.
