Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup zucchini, grated
  • 1 cup carrots, sliced and steamed
  • 1 cup broccoli florets, steamed
  • 3/4 cup oatmeal, uncooked
  • 1 slice whole wheat bread, crumbled
  • 3 tablespoons oat bran
  • 3 ounces cheddar cheese, shredded
  • 1/2 cup tomato sauce
  • 1 - egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sage
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped parsley
  • 6 tablespoons parmesan cheese, grated

How To Make veggie garden loaf

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    In small skillet heat olive oil and saute onion until translucent, about 5 minutes.
  • Step 3
    In large bowl combine zucchini, carrot, broccoli, oatmeal, breadcrumbs, oat bran and cheese.
  • Step 4
    In small bowl beat together tomato sauce, egg and egg white, seasonings and parmesan.
  • Step 5
    Combine all ingredients and stir thoroughly to mix.
  • Step 6
    Turn mixture into 9x5-inch loaf pan coated with non-stick spray.
  • Step 7
    Bake 30 to 35 minutes, or until firm.
  • Step 8
    Let stand 15 minutes before slicing.
